Ice-cream for the summer ahead…

The sun is finally shining, the temperatures are slowly rising and the clocks change at the weekend so it means just one thing – Summer is on its way! Hurrah!

I know every year we all get really excited at the prospect of the sun shining continuously from April until September, or the fact that Mr Weatherman promises Indian summer temperatures, but then the good ol’ British weather lets us down and it rains or is freezing cold, but this year I’ve decided to make the most of whatever weather we are dealt (while keeping my fingers crossed for sun of course), and to do this I have decided that I am going to invest in an ice-cream maker. Yes, you heard me correctly, an ice-cream maker – my reasoning behind this decision is as follows;

1 – I like ice-cream. Simple.

2- During summer, being stuck inside an office, I average at least 4 ice-creams a week from May to August, that’s 64 (excluding ice lollies) in 4 months. An ice-cream cone costs £1.10 if not more – that means I spend almost £71 on ice-cream. Crikey! By buying an ice-cream maker, I would definitely save money in the long run.

3- I almost always have a tub of a very famous American duos ice-cream in my freezer, and unless it is on special offer at my local supermarket that is also a lot of money spent on ice-cream. Ooops! Please don’t tell my other half!

4- With an ice-cream maker you don’t just have to stick to vanilla, chocolate or strawberry flavours, the possibilities are endless – especially if you fancy yourself as a bit of a Heston Blumenthal wanna-be…bacon and egg ice-cream anyone?

5- If the weather doesn’t live up to expectations, and it’s wet and miserable then I will be able to close the curtains and eat ice-cream imagining that I am laid on some far-flung exotic beach.

6- How impressed are my friends and family going to be when they pop round for a BBQ and I bring out home-made ice–cream? As I am not known for being a domestic goddess, the answer to that is, VERY!

I don’t know about where you are, but it is absolutely freezing here on the edge of the Yorkshire Dales. So cold, in fact, that I am sat writing this with gloves on…and a scarf! This awful January weather has got me dreaming of distant beaches and 30˚C heat, but as this is not practical at the moment (feeling the January pinch a bit) I’ve decided that we should take a look at the electric and gas fires available on Go-Electrical, then at least I may be able to take my gloves off!

Sherried Turkey & Ham Bake

Serves 4

Ready in 45-55 minutes

Use the Le Creuset Cast Iron Rectangular Dish

Ingredients

350g/12oz cooked turkey, cut into strips

140g thickly sliced cooked ham, cut into strips

175g frozen peas

50g butter, plus a little extra for greasing the dish

50g plain flour

600ml milk

3 tbsp medium sherry

2 tsp wholegrain mustard

100g cheddar, grated

50g chopped mixed nuts, such as hazelnuts, almonds, and walnuts

Method

Preheat the oven to 200C/Gas 6/fan oven 180C.

Mix the turkey, ham and frozen peas in the Le Creuset Cast Iron Rectangular Dish.

To make the sauce, put the butter, flour and milk in a saucepan and bring to the boil, whisking all the time, until the sauce is thickened and smooth.

Stir in the sherry and mustard, season to taste and simmer for 1 minute.

Remove from the heat and stir in half the cheese.

Pour the sauce over the ingredients in the dish.

Mix the remaining cheese with the nuts and sprinkle on top.

At this point, you can keep the bake in the fridge up to 5 hours, or freeze it.

When ready, bake for 25-35 minutes until the topping is golden and the sauce is bubbling.

In the past few years there has been a lot of talk about the benefits that juicing can have, and how good it is for a healthy body. I have never really paid any attention before, believing that fruit and vegetable juice was thick, green and a bit stomach churning but I have recently discovered that this is definitely not the case. There are some very tasty recipes around, and it makes a change that something is extremely good for you, actually tastes good!

The benefits of juicing:

Juicing fruit and vegetables means that your body can absorb larger amounts of nutrients more effectively. The body doesn’t need to digest the food so the vitamins and minerals in the juice are absorbed quicker than usual.

If you think about the ‘five a day’ advise, you have to eat the recommended portion size of five different things every day. With juicing you use more fruit and vegetables than you can actually probably eat – its relatively easy to drink enough juice to obtain sufficient amounts of powerful nutrients, especially because juicing makes them so concentrated.

Fresh fruit and vegetables contain lots of brilliant enzymes – enzymes increase your metabolic rate, which means you can burn calories faster. Brilliant if you are trying to lose weight.

We all know how important the liver is, and juicing is a great way of looking after your liver. Certain nutrients are needed to help the liver detoxify, and seen as though the liver has over 700 functions it’s a good idea to look after it! Antioxidents beta-carotene, vitamin C and E and N-acetyle cysteine are all potent liver cleansers, and are all found in fruit and vegetables.

Not only that, the antioxidants from fruit and vegetables contain a wide range of plant chemicals called phytochemicals, and these amazing things been found to have anti-cancer properties.

Vitamin C, E, potassium and magnesium are important for improving the cardiovascular system, and maintaining a healthy heart. Blackberries, kiwi, asparagus and spinach and incredibly rich in all these things – now when would you ever eat those four things together normally? Juicing means it is easier (and probably tastier) to do just that.

Now, be honest, did you know all that about juicing? No, me neither!
